With the aim of bringing a truly unique experience of Spanish culinary culture to Norway, Peer Svedbergh, chef, opened in 2021. Over the two years the restaurant has been operating, it has formed a strong team led by the star chef Borja Martino, been included in the prestigious Michelin guide twice, and received numerous positive reviews from experts in the field.
Svedbergh found the "fine dining" experience in Spain to be very special, as it was formal yet had an informal, creative, and theatrical presentation of top-quality ingredients. He brought Borja Martino on board, who had previous experience from several Michelin-starred restaurants.
Together, their aim was to create a great atmosphere and an approachable yet charming fine dining experience, reminiscent of what one would experience in Spain. With this goal in mind, they embarked on creating the little gem by the waterfront, which was well received by the public.
As recently as November 3rd, Dagens Næringsliv published a restaurant review with comments such as "One of the country's most unique and competent kitchens" and "a technical knockout at Tjuvholmen." They also received a high rating reflecting the hard work the chef and the team put in.
- The review is fantastic, and we are both proud and happy," says Peer. "Borja Martino has truly created something special at xef, bringing the taste of Spain to Norway in a completely unique and accessible way. I can only say that we look forward to what lies ahead.
